THE CASTELFRANCO RADICCHIO
The Varied Chicory of Castelfranco is the result of a combination between the Treviso Radicchio and endive. From the endive, the Castefranco Radicchio has preserved its typical serrated yellow-cream leaf and from the Treviso Radicchio it carries the indelible sign of bright red, with clear stripes. With the arrival of winter, the chicory plants reach just the right level of maturity. This is the time to pick them and start the whitening process.
As in the case of the Treviso Radicchio, the roots of the heads are put into special tanks where the warm water of the Sile area allows for gentle recovery of the vegetative phase. In approximately 15 days the plants start to grow small roots, new and delicate leaves are created and they take on the typical colour of the Castelfranco Radicchio.
