THE CHESTNUT OF COMBAI
The chestnut of Combai DOP is produced in the area of the eleven villages of the Mountain Community of the Prealpi Trevigiane. The height limit of the area of product, as chestnuts are demanding in terms of climate, is 800 to 900 metres. The Chestnut of Combai is characterised by a dark brown skin, with very clear stripes and signs, very easy to remove. Its butter white pulp is floury and sweet.
Apart from the fact that they are delicious when roasted, the Combai Chestnut is used to prepare many dishes, not only sweet such as Tiramisù with chestnut cream and Montebianco, but also savoury dishes including the “tacchinella ripiena ai marroni” (turkey stuffed with chestnuts), the “nodini di vitello con marroni e cognac” (veal with chestnuts and cognac) and “pasta ai marroni con ragù di pollo e timo” (pasta with chestnuts with chicken and thyme sauce).
