THE WHITE ASPARAGUS OF CIMADOLMO I.G.P.
The area of production of the White Asparagus of Cimadolmo I.G.P. is concentrated in the heart of the province of Treviso and includes the cities of Breda di Piave, Cimadolmo, Fontanelle, Mareno di Piave, Maserada di Piave, Oderzo, Ormelle, Ponte di Piave, San Polo, S. Lucia di Piave and Vazzola. This asparagus is cultivated on sandy land, of an alluvial origin and permeable.
The temperate and humid climate favours a rapid growth of the asparagus that is sweet, without fibres and white. Thanks to its intense and particular flavour, with the White Asparagus of Cimadolmo it is possible to create unique dishes, from the most simple but appetising such as mini omelettes or “eggs and asparagus” to the most sophisticated ones such as risotto, ravioli and crepes.
